Turkey & Vegetable Skillet

Lean turkey and colorful vegetables create a fast one-pan dinner that works well for busy weeknights and meal prep.

Lean ground turkey takes on whatever seasoning you give it, and the vegetables cook down into something that tastes far more considered than the effort suggests.

No heavy sauce, no cream. The diced tomatoes are all the moisture it needs.

Ingredients

  • 1 1/2 lb (about 680 g) lean ground turkey (93% lean or leaner)
  • 2 bell peppers, diced
  • 2 medium zucchini, diced
  • 1 medium onion, diced
  • 4 cups baby spinach
  • 3 cloves garlic, minced
  • 1 can (14.5 oz / 411 g) diced tomatoes, no salt added
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons Italian herbs, 1 teaspoon paprika, black pepper and salt to taste
  • Optional: cooked brown rice, quinoa, or whole-grain pasta to serve

Instructions

  1. 1Warm the olive oil in a large skillet over medium-high heat.
  2. 2Add the onion and cook 3 to 4 minutes until it softens, then add the garlic for 30 seconds.
  3. 3Add the ground turkey and break it up with a spoon. Cook 6 to 8 minutes until no pink remains.
  4. 4Stir in the bell peppers and zucchini and cook another 5 minutes, until just tender but not mushy.
  5. 5Add the diced tomatoes with their juice, the herbs, paprika, and pepper. Simmer 5 minutes.
  6. 6Fold in the spinach and cook 1 to 2 minutes until it wilts.
  7. 7Taste, adjust the seasoning, and serve on its own or over rice, quinoa, or whole-grain pasta.

Simple Substitutions & Variations

  • Ground chicken, lean ground beef, or crumbled extra-firm tofu all work in place of turkey.
  • Add mushrooms, green beans, or corn depending on what needs using.
  • Cumin, chilli powder, and lime turn it into a Southwest skillet.
  • Serve over cauliflower rice for a lower-carbohydrate version.
  • It keeps in the fridge for four days and freezes well in single portions.
